Parmesan Meatballs with Noodles and Cheese Sauce (Serves 1)
Ingredients
For the Meatballs:
125g lean beef mince
1 tbsp grated Parmesan cheese
1 tbsp breadcrumbs
1 small egg (or 2 tsp whisked egg)
1/2 garlic clove, minced
1/4 tsp dried oregano
Pinch of salt and pepper
1 tsp olive oil (for frying)
For the Cheese Sauce:
1 tsp butter
1 tsp all-purpose flour
1/3 cup (80ml) milk
2 tbsp shredded cheddar
1 tbsp grated Parmesan
Salt and pepper to taste
For the Noodles:
60g dried noodles (about 1/3 cup uncooked)
Toppings:
Extra Parmesan
Pinch of oregano
Salt and black pepper
Method
1. Make the Meatballs:
In a small bowl, mix mince, Parmesan, breadcrumbs, egg, garlic, oregano, salt, and pepper.
Roll into 4 small meatballs.
Heat olive oil in a small pan over medium heat and cook meatballs, turning, for 6–8 minutes until browned and cooked through.
Set aside.
2. Cook the Pasta:
Boil pasta according to package instructions. Drain and set aside, saving 1 tbsp of pasta water.
3. Make the Cheese Sauce:
In a small saucepan, melt butter.
Stir in flour and cook for 30 seconds.
Slowly whisk in milk and cook until thickened (2–3 mins).
Stir in cheddar and Parmesan. Season with salt and pepper.
Thin with reserved pasta water if needed.
4. Serve:
Toss noodles with the cheese sauce.
Top with meatballs.
Sprinkle with extra Parmesan, oregano, salt, and pepper.
Enjoy warm!
